Nothing beats fresh muffins, especially when they are packed with cacao! Cacao, not to be confused with cocoa, refers to the tree and unfermented bean. Basically it is the very first stage of chocolate making, raw with all enzymes and antioxidants intact. This super bean contains Oleic Acid, which has been linked to lower cholesterol. Cacao is also a great source of magnesium, which helps with calcium absorption, metabolism, and protein synthesis. Combine that with fresh bananas which are full of potassium and you have some mighty healthy muffins coming your way.
Total Time: 25 minutes
Makes 8 – 10 Muffins
Preheat oven to 180o
Place all ingredients into a bowl and mix with a wooden spoon until well combined.
Place mixture into large muffin trays, patty lined if you desire, filling ¾ of the way to the top.
Bake in oven for approximately 15-20 minutes.
They are cooked when they spring back when lightly touched in the centre.
These can be frozen if you don’t manage to get through them in one sitting.
